Our Story

About Pablo’s

Pablo’s started in 2020, which wasn’t the best year for hospitality, or for anything really. We opened anyway. A bootlegged. breakfast operation built on bao buns, eggs, and blind optimism.

The idea was simple enough to survive a crisis: put breakfast in a steamed bao bun, hand it over, let people be happy for a minute.

The menu has four items aaand that’s it.
There are no meetings about new ones. No brainstorming. No “Bao of the Month.” We focus HARD on making the exact same breakfast CONSISTENTLY. Think of Pablos like your favourite hoodie, but edible.

Everything is made fresh to order and usually in under 7 minutes..

Healthy? Absolutely not.

These Eggs-Go-Baos fix hangovers, cold mornings, double shifts, first dates, third dates, mate dates, pay day, no-pay day, birthdays, breakups, train delays, dog walks, study sessions and accidental life reflections.
Whatever’s happening, a breakfast bao helps.

We’ve now got six sites across the North East and Edinburgh, which is either impressive or just proof that people like carbs more than they admit. Either way, we’re here.
