Pablo’s at Inverleith in Edinburgh– Our Leap North

By May 2023 we packed up the bao buns and took them north. Edinburgh, baby. Specifically Inverleith. Our first shop far from home and a proper leap into new territory. Some said it was bold. Some said it was stupid. We said, “Aye, let’s do it.”

We’re just down the road from the Royal Botanic Garden. Which is funny because we sell breakfast and bao, not begonias. But if you want to smash a bao then go stare at some flowers, you’re in the right postcode. Think of it as culture with carbs.

The neighbourhood has that classic Edinburgh vibe. Smart buildings, students pretending they aren’t hungover, dogs that look like they’ve been groomed by artists. Into that, we rolled with bao that drips sauce down your shirt. Balance.

This was our first site far away from Newcastle. New city, new crowd, same mission: serve the best breakfast in Edinburgh and make it fun. Whitley Bay gave us the sea. Blandford Street gave us the football fans. Edinburgh gave us bagpipes, posh accents, and botanicals. Every city has its flavour, and we’re here for it.

People in Edinburgh aren’t shy. Reviews so far have told us we’re “a hidden gem” and “better than expected.” Which, honestly, is the story of our lives.

One customer came in after the Botanics and said:

“Perfect stop before heading home. Didn’t know I needed bao for breakfast until today.”

Another left us this gem:

“It’s not a fry up, but it’s the future.”

We’ll take it.

Why should you come visit us? Because it’s Pablo Eggs-Go-Baol Because it’s breakfast with bite. Because it’s bao near the Botanics. And because it proves that even in the land of whisky and deep fried everything, the breakfast bao still wins.

62 Inverleith Row, Edinburgh. EH3 5PX.
